The Algarve’s hidden hills, reimagined

Viceroy at Ombria Algarve doesn’t sit on the crowded coast but high in the region’s rolling green hills, where almond trees scatter pale blossoms and cobblestone streets echo village life. Designed to resemble an Algarvian hamlet, the 76 rooms and 65 residences balance Moorish detail with crisp, contemporary design.

The mood here is unhurried: mornings begin with freshly baked bread and fig jam at Café Central, afternoons drift into laps of the pool or rounds on the award-winning golf course, and evenings end with cataplana shared over regional wine. This isn’t just luxury; it’s the Algarve distilled into a home from home.

WHAT'S INCLUDED?

Hotel highlights

Surrounded by cork forests and citrus groves, the resort’s clustered houses mimic a traditional hillside village. Moorish flourishes appear everywhere from chimneys latticed like lacework to taipa (rammed earth) walls and tiled mosaics that echo local craft. A short drive from Loulé’s market town, it feels worlds away. Trails begin just beyond the resort, winding through waterfalls and wildflower meadows. This is the Algarve off the tourist trail: rugged, restorative, and quietly cinematic.
The spa here moves at a simmer. Spanning three floors, it layers stillness into everything from its heated water massage table to its private Celebration Suite with steam shower and jacuzzi. Treatments are rooted in Portuguese earth: salt scrubs made from regional minerals, oils infused with local herbs and flowers, and Azorean spirulina facials to lift and firm. For something deeply Algarvian, try the Herbal Compress massage, where seasonal herbs are wrapped in cloth, warmed, and pressed across the body. Couples should try the Ritual of Love, a two-hour journey that ends with a cacao ceremony, equal parts spa treatment and soulful reset.
Food at Ombria is a love letter to Portugal, retold in half a dozen different voices. At Ombria Kitchen, octopus salad with coriander and olive oil sets the tone, followed by a copper-pot cataplana brimming with clams, shrimp, pork and chorizo. Solalua is where evenings unfold, with port-tonic cocktails at sunset and crab-filled bolas de Berlim, a naughty twist on the doughnuts sold on Portuguese beaches, as a starter. Poolside at Salpico, presunto from acorn-fed black pigs arrives with roasted octopus and sweet potatoes, while Bellvino rooftop pairs sheep’s cheese and olive oil with flights of regional wine. Even Café Central makes breakfast feel special: pastéis de nata warm from the oven, eaten while locals chat across the terrace.
Families are woven into the rhythm of life at Viceroy Ombria. The V Team Kids' Club is the world made miniature, where children cook in a kid-sized kitchen, get messy with crafts, or nap in cosy corners while parents steal a rare, guilt-free hour or two. Outdoors, there’s space to run, splash, and tumble under the Algarve sun, with a family pool designed for play. Babysitting is available for the littlest travellers, and family villas come stocked with thoughtful touches, from wooden toys to pop-up tents. This is luxury with paint on its fingers.
Viceroy at Ombria doesn’t traffic in generic resort “activities.” Instead, it taps into the Algarve’s cultural heart. Spend a morning with the Executive Chef at Loulé market, bargaining for seafood and herbs before cooking your finds back at the hotel. Learn pottery or tile-painting with artisans who trace their craft back generations. Try esparto weaving, twisting Mediterranean grass into baskets with Manuela and Maria José. And the magic doesn't stop when the sun sets, an evening here might include a BBQ, live music, or a cinema under the stars.

The Azorean spirulina facial, which uses nutrient-rich sea algae to lift, firm, and deeply detoxify the skin while finishing with a blissful head massage.

What about a sunset on the castle-top terrace at Casa E Fora, where a port-tonic in hand somehow makes the mountain views feel even grander?

And don’t skip the honey harvesting tour near Salir, a hands-on peek into traditional beekeeping that ends with tastings straight from the comb.
