Artful calm with a Cycladic soul

NOŪS Santorini is what happens when Cycladic tradition gets a knowing wink from contemporary art. Set away from the Caldera crowds, this design-forward resort is built around the island’s largest pool – a gently shelving, lagoon-like beauty that becomes the centre of the hotel.

Rooms and suites are generously sized by Santorini standards, many with private pools tucked into landscaped terraces for sunrise swims and discreet afternoon lounging. Interiors flirt with 70s design – cane, curves, and warm terracotta tones – but the comfort is thoroughly modern, right down to Imperial Strom beds and Byredo toiletries.

WHAT'S INCLUDED?

Hotel highlights

NOŪS sits in Mesaria, quietly confident and deliberately removed from Santorini’s headline chaos. You’re perfectly placed: Fira and Oia are within easy reach, but you return to something far more serene. The east-facing setting makes sunrises the star – think golden light spilling across pale stone and gardens before most of the island has stirred.

Kamari’s black-sand beach is a short taxi-ride away, Pyrgos’ traditional lanes and tavernas are nearby, and the airport is conveniently close without ever intruding. It’s an ideal base for exploring ancient sites, wineries, and hidden beaches – or for doing absolutely nothing at all, which NOŪS makes very easy indeed.

Food here leans Mediterranean with polish rather than pretence. Elio’s, the poolside restaurant, is an all-day affair where long lunches slip effortlessly into sunset aperitifs. Expect white-tablecloth classics with soul: shrimp saganaki bubbling with feta, lobster pasta finished with cognac, and yellowfin tuna brightened with cherry tomato confit.

Breakfast is a genuine highlight – fresh fruit, local pies, cheeses, and eggs cooked to order, best enjoyed poolside with the morning stillness. Cocktails are playful and rooted in place: the Caldera blends Jack Daniel’s Honey with vinsanto and cherry tomato syrup, while the Meltemi goes herbaceous and refreshing. The wine cellar rounds things off beautifully, offering guided tastings that make Santorini’s volcanic wines finally click.

The spa at NOŪS is a place where time loosens its grip. A calm, architectural sanctuary with an indoor-outdoor pool, sauna, steam bath, and cold plunge – its designed for unhurried drifting between states of bliss. Treatments draw on Naxos Apothecary products and local ingredients, with standouts such as grape-based therapies inspired by Santorini’s vineyards.

There’s a light-filled gym stocked with Matrix equipment, an outdoor yoga area for sunrise stretches, and a vitamin bar for post-treatment glow maintenance. Even the treatment rooms open to outdoor space, reinforcing the sense that nature is very much part of the process. You leave lighter, looser, and faintly smug.

NOŪS excels at curating experiences without making a fuss about it. Wine and food tours dive deep into Santorini’s culinary DNA, from vineyard tastings to hands-on cooking classes. On the water, private catamaran and sailing yacht cruises explore the caldera with style. Back on land, island tours trace Santorini’s history from prehistoric Akrotiri to Lost Atlantis legends, often finishing with – yes –more wine. Romantic souls can book candlelit in-room dining or a couples’ spa journey, while the more adventurous might opt for a something that takes you out of your comfort zone. It’s all handled seamlessly, usually via WhatsApp, because effort is so last season.
