Helping hotels tackle food waste

The demand for all inclusive holidays has never been higher, which is why we recognise the need to address a pressing sustainability issue: food waste. 

Drawing on the expertise of students from our Sustainable Tourism Programme, we embarked on a mission to uncover the true impact all-inclusive holidays have on the environment, focusing on resorts in Tenerife. We found that 18% of food waste in Tenerife can be attributed solely to the hospitality sector. Developing effective measures to combat the issue with our hotel partners effective measures is pivotal for the reduction of local inequalities (SDG 10) and enacting wider action in reducing hunger (SDG 2).

That’s why we launched a first of its kind partnership with Winnow, creators of a ground-breaking AI technology that features a motion camera and sophisticated sensors that can ‘see’ and understand food waste in real time. Kitchen teams receive insightful reports that pinpoint precisely where food waste occurs, empowering them to make changes and implement improvements. 

The results are impressive. Typically, kitchens fitted with Winnow's technology achieve a 50% reduction in food waste within just 12-18 months, leading to substantial savings on food purchases, ranging from 2-8%. To further investigate its potential, we've sponsored a 12-month trial of Winnow's innovative system at the Bahia Principe Sunlight Costa Adeje hotel in Tenerife. 

We'll be closely monitoring the trial's progress, and if successful, we’ll work with key partners to roll out the technology more widely, to encourage more responsible consumption around food within the hospitality sector (SDG12).
