Another fabulous dish is the Pasta alla Norma, with tomato sauce, fried aubergines, basil and lashings of ricotta. Finish off your meals with some local delicacies, such as olivette di Sant’Agata, marzipan, the famous ossi di morto, the torrone of Sant’Agata. Then wash it all down with some outstanding Etnean red or white wine, and you’ve had a culinary experience you’re not likely to forget in a hurry!
